Kaukauna Roasted Poblano Dip

HOW TO MAKE IT

For Poblanos:

  1. Clean and dry poblano peppers.
  2. Place them on a sheet pan lined with parchment paper.
  3. Put under oven broiler set on high for 5 minutes per side or until blistered.
  4. Remove from oven and set aside to cool for 20-25 minutes.

For Dip:

  1. Pull cooled peppers off the stem and dice them. Set aside.
  2. In a large cast iron skillet, over medium heat add heavy cream.
  3. Stir with a spatula for approximately a minute.
  4. Add Kaukauna Sharp Cheddar Spreadable Cheese and stir until fully melted.
  5. Incorporate the diced roasted peppers.
  6. Add the Queso or Mozzarella, stir.
  7. Add cumin, taco seasoning, salt and pepper.
  8. Top with juice of lime, tomatillo salsa and fresh cilantro.
  9. Serve with chips and enjoy!
